In 2017, Adrien Pélissié and Julien Brustis, winemakers trained in Gironde, have brought viticulture back to the Versailles Plain. One hundred and fifty years after the phylloxera, the vineyard has returned to Davron, on the lands that once supplied the royal table.

The Bouche du Roi estate now comprises twenty-seven contiguous hectares, which have been farmed organically since the first vines were planted. The vineyard is planted with six grape varieties, selected for the limestone soil of the Versailles Plain: Chenin, Chardonnay, and Sauvignon for white wines; Merlot, Cabernet Franc, and Pinot Noir for red wines.

The estate’s name is a tribute. At the court of Versailles, “La Bouche du Roi” referred to the department of the King’s Household responsible for wines and the table: sommeliers, cupbearers, and chefs, who oversaw what was served to the King. It was the supreme authority on French taste, where the most closely watched table in Europe was set each day. By adopting this name, the estate embraces this heritage and gives voice to a culinary art that Versailles had elevated to its highest form.
